This coffee grows in the mountainous highlands of Ethiopia's Guji region, where volcanic soil and high elevation create close to ideal growing conditions. Guji built its reputation on vibrant fruit, floral aromatics, and a clean, tea like finish. One cup explains why Ethiopian coffee is celebrated worldwide.
This lot is naturally processed. The cherries dry whole in the open sun before the fruit comes off, a traditional method that lets the beans pull in more of the fruit's natural sugars. The payoff is a sweeter cup with fuller body and fruit flavor turned all the way up.
It opens with hibiscus on the nose. Then come layers of dark berry sweetness, bright and complex the whole way down.
